Career and Technology Education (CTE)
Brooklyn Center High School offers articulated credit opportunities in conjunction with Hennepin Technical College and Normandale Community College in the field of culinary arts. This course is designed to introduce the foodservice industry, its history, organization, the importance of safety/sanitation, and the care and use of kitchen tools and equipment. It also includes product identification, recipe structure, menu planning, basic dining room operations, plus basic cooking principles. Fundamental culinary math skills such as weights and measures are required as recipe conversion, yield tests, menu-pricing, inventories, and food costs are studied.
